I wanted to have my Mothers cocktail meatballs without the sugar. Here is what I do to make delicious cocktail meatballs that are also healthy.
Ingredients
2 lbs Grass Fed Lean Ground Beef.
1/2 Large Minced Onion
1 Egg
1 TB Coconut Flour
1 tsp Sea Salt
1tsp Dried Mustard
1/2 TB Coconut Aminos (optional for extra ooomph)
1-2 Minced Garlic Cloves
1 tsp Cracked Whole Pepper (I like smoked pepper)
1/4 C Hot Pepper Jelly (paleo friendly versions)
2-3 TB Water
How to Prepare
I like to saute the onions and garlic a little before I combine them with the meat, but this is totally optional. So add everything together in a medium sized bowl, except the jelly and water. Form little cocktail sized meatballs and put them on a parchment or foil lined baking sheet. Put them in the oven at 350 degrees for 30 minutes. Turn them a couple of times to keep maintain the shape.
Once you have your meatballs mostly cooked, place them in a pan or crock-pot. Combine the jelly and water into a sauce and pour it over your meatballs. Cook the meatballs in your sauce for a little while and then enjoy!
